Bird Nest Cupcakes


I saw these Bird Nest Cupcakes a la stephmodo the other day and decided that they were the perfect thing for a couple of deliveries I wanted to make this week. I followed her links to the recipes for Magnolia Bakery's chocolate cupcakes and vanilla buttercream frosting, toasted some coconut, and topped them with peanut M&Ms (she used jordan almonds, but I couldn't find any at my local store the day before Easter - and besides, I prefer peanuts anyway). Then I planted them in a shallow box with some plastic Easter grass that I had on hand and delivered them. Oh, and I ate a couple too.
I have to say, I have never made cupcakes from scratch before, and I was surprised at how simple they were to make (well, I do have a KitchenAid) and how delicious they turned out. The batter was like mousse. I was really worried that I had done something wrong, but the texture of the finished product was like no cupcake I've ever eaten (well, maybe I did do something wrong, but it sure worked for me). They have unsweetened chocolate in them which gives the plain cupcake sort of a bitter taste, but when paired with the sweetness of the frosting, it's like heaven in every bite. Well, they were pretty good for cupcakes anyway. Now I'm really curious about the ones at Magnolia Bakery. Anyone planning a trip to New York? Would you mind picking some up for me? Oh, and a glass of milk to go with it.

I've been meaning to tell you how delicious they were! Layne was amazed. He was especially impressed with the icing. Heavenly. It's been a long time...maybe a lifetime...since we've had cupcakes that didn't come out of a box and icing that didn't come out of a tub. They were divine. I had every intention of giving the kids one each but, um, that didn't happen. Thanks so much. I'll have to try making them myself. After all the Easter candy is gone. :)

Just couldn't leave your blog without offering my AMEN to the goodness of Magnolia Bakery's cupcakes!! We made the stop at Darice's suggestion while we were in New York at Thanksgiving. Well worth it! Can't wait to try the recipe!!! THANKS, Sjauna!!
